Our Kombucha

 

Kombucha originated in the region between China and Russia (historically referred to as Manchuria) around 2000 years ago and was initially prized for its healing properties. In essence, a fermented tea, it possesses all the health benefits of fermented foods that the modern world has been discovering in recent years. 

Driven by our ethos of integrity and taste, we decided to look for the highest quality teas we could find, sourced in a way that respects both the tea growers and their land.

The winning combination was two white silver needle teas, Ying Zhen and Snow Bud, the green Huang Shan Ya jasmine tea leaf and Sencha.

 

White Teas

Jasmine Ying Zhen

Harvested in May from the ancient and classical province of Fujian, where white and jasmine teas are naturally grown. This white tea is produced by the imperial plucking method, performed at dawn on just two days of the year. 

Freshly plucked tea buds are laid on to large sun-soaked blankets to wither and dry. Once ready, the leaves are sorted into just three grades, the best being the pure needle-like in appearance bud; classed as Ying Zhen silver needle.

The beauty of its fine, silvery buds, and its delicate and refreshing taste make it one of the most captivating and prized teas in the world.

Snow Bud

Snow Bud has a beautiful silvery leaf that’s selected from the finest white leaves of the highlands of South West Zhejiang or Fujian provinces in China.

This pale brew has a distinctive bright taste, giving a complex sweet, floral and slight nutty undertone in flavour.

 

Green Teas

Jasmine Huang Shan Ya

Prepared from the finest green leaves that have been lightly steamed and then gently infused with the scent of Jasmine flowers. 

Huang Shan Ya produces a rich lemony brew with a light jasmine scent. An excellent aid to after dinner digestion.

Sencha Green Tea

One of the most popular teas in Japan, Sencha is prepared by harvesting the upper leaves and buds and then infusing and steaming the whole leaf. The result is a brew with a refreshing grassy flavour and a myriad of well documented health benefits.

Imperial Plucking

Imperial tea plucking takes place in China in May. Only the bud with one immediate young leaf is plucked by the most skilled pickers. It is a very exceptional occurrence, only taking place in those rare villages said to produce the most famous teas that historically would have been reserved for the emperor.
